Kottu Roti is one of Sri Lanka's most iconic street foods, known for its loud rhythmic chopping sound and incredible aroma. It’s a stir-fry made with chopped flatbread, vegetables, eggs, and meat. Think of it as a spicy, sizzling street-style stir-fry that's fast, filling, and full of flavor!
Ingredients
2–3 Godamba roti (or paratha), chopped into small pieces
1 cup cooked chicken or beef (optional)
1 cup mixed vegetables (carrot, cabbage, onion, leeks, etc.)
2 eggs
2 tbsp oil
Salt, pepper, curry powder, and chili flakes to taste
1/2 tsp soy sauce (optional)
1 chopped green chili (optional, for spice lovers!)
A handful of fresh coriander (for garnish)
Instructions
Heat oil in a large griddle or wok on medium-high heat.
Add onions and sauté until soft. Toss in the vegetables and stir-fry for a few minutes.
Push veggies to the side, crack in the eggs, scramble, and mix.
Add meat (if using), then chopped roti. Mix everything thoroughly.
Season with curry powder, salt, pepper, chili flakes, and soy sauce.
Continue stir-frying for 3–5 minutes until hot and well combined.
Garnish with fresh coriander and serve hot!
