Chicken Curry is a rich and flavorful dish popular in many South Asian countries. With tender chicken pieces cooked in a spicy, aromatic curry sauce, it’s the perfect comfort food!
Ingredients
1 kg chicken (cut into pieces)
2 large onions (finely chopped)
2 tomatoes (chopped)
1 tbsp ginger-garlic paste
2 green chilies (slit open, optional for heat)
1 tbsp curry powder
1 tsp cumin powder
1 tsp coriander powder
1/2 tsp turmeric powder
1/2 tsp garam masala
1 cup coconut milk
2 tbsp vegetable oil
Salt to taste
Fresh coriander (for garnish)
Water (as needed)
Instructions
In a large pot or pressure cooker, heat oil over medium heat.
Add onions and sauté until they become golden brown.
Add ginger-garlic paste and sauté for another minute until fragrant.
Stir in chopped tomatoes and cook until they soften and release oil.
Add the green chilies, curry powder, cumin powder, coriander powder, turmeric, and salt. Stir and cook for 2-3 minutes.
Once the spices are well combined, add the chicken pieces to the pot. Stir to coat the chicken with the spices and cook for 5-7 minutes until the chicken is browned.
Add water as needed (around 1-2 cups) and bring the mixture to a boil.
If using a pressure cooker, cook for about 10-12 minutes. If using a regular pot, let the curry simmer on low heat for 20-30 minutes until the chicken is tender and fully cooked.
Once the chicken is cooked, add coconut milk to the curry and simmer for another 5 minutes to combine the flavors.
Check for seasoning and adjust salt if needed.
Garnish with fresh coriander and serve hot with rice or roti!
